Preheat your oven to 350° Farehneit.
On medium heat, heat a small saucepan and add the fennel seeds and lime zest and dry toast for a couple minutes until fragrant. Then tip into a mortar and pestle and add the sumac. Grind until a fine and even consistency.
Brush each side of the salmon with olive oil and then season with salt and pepper on both sides. Place the salmon fillets on the baking tray. Place the fennel and lime zest mixture on each fillet add pat on top.
Bake the salmon fillet with the skin side down for 15 minutes or until the salmon flakes easily.
Serve with rice or salad. Our tzatziki sauce will complement the flavors of the salmon perfectly.

1 tsp. Sumac
2 tbsp. Olive Oil
